Champagne Carbon Cuvée Brut Champagne NV (750ml)

This Champagne is an artistic performance - bright with a beautiful gold tint. The nose is captivating and precise, it clearly expresses the marine world, the pebble, the shell, the while flowers and the aniseed root medium associated with fennel. The saline tension is palpable, after a few minutes a densification takes place and delivers noble perfumes of butter, cream, praline then honey and mocha. The mouth is delicate and presents a natural fat thickness, as you savour by greediness the peanut, caramelized salted butter, the pastry and the fine wood. Energetic with a resolutely precise finish.
Blending: 50% Chardonnay, 25% Pinot Noir, 25% Meunier
Fermentation: 100% alcoholic fermentation in small oak barrels. No malolactic fermentation.
Wine Pairing: This cuvée will go perfectly with smoked salmon with tarragon, a fillet of cod in lemony white butter and fresh chives. Great with caviar, shellfish, crab, and lobster
